Apple and Elderflower Jelly

  • 4 apples
  • 1 cup elderflower cordial
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons gelatin powder

Start by peeling, coring, and chopping the apples into small pieces. Place the apple pieces in a saucepan with the water and simmer over medium heat until the apples are soft and mushy. This should take about 15-20 minutes.

Step 2: Strain the Apple Mixture

Once the apples are cooked, strain the mixture through a fine-mesh sieve or cheesecloth to separate the liquid from the solids. Press down on the solids to extract as much liquid as possible. Discard the solids and return the liquid to the saucepan.

Step 3: Add the Elderflower Cordial and Sugar

Add the elderflower cordial and sugar to the saucepan with the apple liquid. Stir well to combine. Place the saucepan back on the stove over low heat and continue stirring until the sugar has completely dissolved.

Step 4: Bloom the Gelatin

In a separate bowl, sprinkle the gelatin powder over 1/4 cup of cold water. Let it sit for a few minutes to bloom. Once the gelatin has absorbed the water and become soft, place the bowl in the microwave and heat for 20-30 seconds until the gelatin has completely dissolved.

Step 5: Combine the Gelatin and Apple Mixture

Pour the dissolved gelatin into the saucepan with the apple and elderflower mixture. Stir well to ensure the gelatin is evenly distributed. Remove the saucepan from the heat and let it cool for a few minutes.

Step 6: Pour into Molds

Prepare your desired molds or serving dishes by lightly greasing them with a neutral oil. Pour the apple and elderflower mixture into the molds, filling them to the desired level. Place the molds in the refrigerator and let them set for at least 4 hours or overnight.

Step 7: Serve and Enjoy!

Once the jelly has set, remove the molds from the refrigerator. To unmold the jelly, dip the bottom of the molds in warm water for a few seconds, then gently invert them onto serving plates.
