Italian Sausage and Peppers Subs

  • 4 Italian sausages
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (red, green, or a mix), thinly sliced

  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 4 sub rolls
  • Optional toppings: melted cheese, marinara sauce, or hot giardiniera


1. Preheat your oven to 375°F (190°C).

2. In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides. This should take about 5-7 minutes. Once cooked, remove the sausages from the skillet and set them aside.

Stir in the minced garlic, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together.

5. Cut the sub rolls in half lengthwise, leaving one side attached to create a hinge. Place them on a baking sheet and toast them in the preheated oven for about 5 minutes, or until they become slightly crispy.

6. Remove the toasted sub rolls from the oven and fill them generously with the sausage and pepper mixture. If desired, top with melted cheese, marinara sauce, or hot giardiniera for an extra kick of flavor.
