Instructions:

Step 1: Prepare the Mint

Wash the fresh mint leaves thoroughly and pat them dry with a paper towel. Remove the stems and chop the leaves finely. Set aside.

Step 2: Extract the Lime Juice

Squeeze enough fresh limes to obtain 2 cups of lime juice. Strain the juice to remove any pulp or seeds. Set aside.

In a saucepan, combine the water and chopped mint leaves. Bring the mixture to a boil over medium heat. Once boiling, remove the saucepan from the heat and let the mint steep for 10 minutes. Strain the mixture to remove the mint leaves, pressing them against the strainer to extract all the flavor.

Step 4: Make the Jelly

Return the mint-infused water to the saucepan and add the lime juice. Stir in the granulated sugar until it dissolves completely. If desired, add the rum for an extra kick of flavor. Bring the mixture to a rolling boil over high heat, stirring constantly.

Step 5: Add the Pectin

Once the mixture is boiling, add the liquid pectin and continue to boil for an additional minute, stirring constantly. This will help the jelly set properly.

Step 6: Optional: Add Food Coloring

If you want your jelly to have a vibrant green color, add a few drops of green food coloring and stir until well combined.

Step 7: Jar and Store

Pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars clean and seal them with the lids. Process the jars in a boiling water bath for 10 minutes to ensure proper sealing. Allow the jars to cool completely before storing them in a cool, dark place.
